Bittersweet Chocolate Ganache


Ingredients
- 240g Heavy Cream
- 75g Sugar
- 75g Corn Syrup or Glucose
- 285g Bittersweet Chocolate
- 75g Unsalted Butter

Preparation
1- In a saucepan, bring the cream, sugar and corn syrup to a boil.
2- Chop the chocolate into smaller pieces and place it in a mixing bowl. Melt it in the microwave.
3- Soften the butter in the microwave for a few seconds (be careful and watch it because if it melts, you'll have to get another piece of butter and start all over again).
4- When the cream mixture boils, start pouring it over the chocolate and let the chocolate melt for 1-2 minutes. Then mix it with a blender or a spatula. Add the butter and finish mixing.
5- The ganache is ready. Now, if you want, you can use it, for example to cover a cake or as decoration for a cake. You can also fill tartlets.
